Apple ice cream
When the weather gets colder, we receive lots of apples from Nagano prefecture. In this season, I make ice cream with those apples that is delicious without anything added.
It is kind of hard to find good apple ice cream…I hope you’ll like this one!
Making smooth ice cream may require an ice cream-maker…but see what you think..!
[Ingredients]
450g-500g(a pound to a little over pound)of Apples (I used Fuji apples this time.)
Some Apple juice (100%)
150 cc (5 oz)of Heavy cream
170cc(6 oz) of Condensed milk
30g(1 oz) of Unsalted, melted butter
a pinch of Cinnamon powder
[how to make it]
Usually, people use this kind of apple called “Kogyoku” for baking, but I don’t use that kind very much…I use the ones I receive from my relatives. Mix the heavy cream and Condensed milk in a bowl large enough to add the apples later.
Apples change color very quickly, so you should prepare your mixer and scale before you peel them. Peel and core the apples, then cut them like the picture.
Put these into the electric mixer and pour some apple juice. (Less juice added is better.) Then mix them.
Puree quickly to keep the color from turning brown. Once this is done, measure 500g(1.1lbs) of puree and put it into the bowl with the cream and condensed milk.
Add the melted butter and keep mixing, otherwise, the butter will become pebbly. Add 2-3 sprinkles of cinnamon if you’d like.
You will put this into ice cream maker.
This is my ice cream machine. It is small, but we use a lot especially during the summer time!
This ice cream is done. I put it in a freezer first, then served it to my guests with a not too sweet caramel sauce.
