Soffritto is something you stir-fry some onions, carrots, and celery slowly.
It is used like onion paste, but the difference is that onion paste sweetness is a strong sweetness, and soffritto sweetness is a deep sweetness.
This recipe is very restaurant recipe like…just like the onion paste. I use this soffritto for Spaghetti alla Bolognese, and “ Tomato basil spaghetti”. It is very popular.
Carrot (about a half the amount of onion)
Celery (about a half the amount of carrot)
[How to cook]
You don’t have to measure the ingredients just right. About is fine. You will mince the onion, carrot, and celery.
It is just like the picture above. It is cut very finely. You just need to be careful to mince the ingredients into the same size in order to cook them evenly.
You will stir-fry them with some olive oil.The order of the cooking is 1.carrot, 2. celery, and 3. onion. The reason why I cook this way is because I start cooking from harder ingredient. However, it might not make a big difference since you need to cook it for a long time… I just show it the way I always cook 🙂
At first, you cook them over medium heat. Once it starts to stick to the pan, you will turn the heat down to very low.
You will keep cooking(stir-fry)till it looks like the picture above. When you try tasting, it should be very soft. It takes a while till this condition. You just need to be patient:)
There is nothing difficult to cook this. You will just keep mixing and stir frying till it gets softer and sweeter.
Once it is soft, cool it off in the room temperature. Then put it in the refrigerator. It is done!
You will not eat it just like this, but it is very important item for me.
